1 medium, peeled Eggplant cut in rounds
3 tbsp Tomato Salsa
1 tbsp Pesto
4 oz Mozzarella cut in rounds
2 oz Parmesan flakes
30 ml Olive Oil
1/2 tsp Kosher Salt
1/2 tsp Black Pepper

Air fried Eggplant Towers is a great vegetarian dish, full of Mediterranean flavors.

To start with, the combination of tomato sauce and pesto is definitely one to try. Adding cheeses is a classic and I love how the eggplant ties all together. All in all, these Eggplant Towers can be enjoyed as a side to a main, or even on its own.

I would pair the eggplants with Airfried Stuffed Chicken as the flavors match well. Alternatively, you can make a nice Airfried Feta Cheese Salad on the side and have yourself a No-Meat Night.

To conclude, these Air fried Eggplant towers are a fun and easy meal to cook in your airfryer. They are bursting with flavors and will tele transport you to the Mediterranean coast for a quick , delicious second.



Preparation time

Season the cut in rounds eggplants with salt and pepper.

Brush them with olive oil on both sides to ensure they do not still to the grill.

Place one eggplant round on the grill, spread with 1/2 tsp of the sauce (tomato and pesto sauce combined). Then add a mozzarella round. Place another eggplant round and repeat.

On the top of the tower, spread the sauce and parmesan flakes.


Airfryer time

Airfry for 18 minutes at 375F / 180C. Sprinkle with more parmesan flakes if you are into it!
