Air fried Eggplant Towers is a great vegetarian dish, full of Mediterranean flavors.

Preparation timeSeason the cut in rounds eggplants with salt and pepper. Brush them with olive oil on both sides to ensure they do not still to the grill. Place one eggplant round on the grill, spread with 1/2 tsp of the sauce (tomato and pesto sauce combined). Then add a mozzarella round. Place another eggplant round and repeat. On the top of the tower, spread the sauce and parmesan flakes. |
