Air Fried Artichoke is an easy veggie dish you can prepare quickly in your air fryer.
Quick tip: Be sure to remove the hard leaves before air frying and also after. The ones that are on the outside will definitely get too crunchy and chewy to eat. A lot of recipes call for cutting the artichoke in halves before air frying. I went with the other way around to soften the artichoke first. This means I started by air frying the entire artichoke and then I halved it. Do not forget to scoop out the fluff that is located in the heart of the artichoke. This is my first time attempting to cook an artichoke and I was a bit surprised how much fluff was there in the middle. With the help of a spoon, though, it is quite easy to get out.
All in all, this is a very simple recipe that uses Mediterranean-inspired seasoning – olive oil and lemon. The artichoke comes out fresh and juicy on the inside.
What would you serve on the side, you may ask? You can serve some aioli or garlic mayonnaise on the side of the Air fried Artichoke. Additionally, I would pair this delicious veggie dish with some Air Fried Chicken skewers, Baked Camembert or Basil Chicken.
