minutesAirfried Beets & Potatoes is an easy, healthy AirFried dish that can be cooked as a side or vegetarian / vegan main meal.
Ingredients
1 potato
1 beet
1 shallot
A few baby onions
1/2 sweet onion
3 tbsp Olive oil
2 tbsp Salt
1 tbsp Pepper
1 tbsp Cayenne pepper
3 tbsp Rosemary dry / fresh
How To
- Cut the veggies in cubes and place in a bowl
- Add the spices and mix well
- Place the veggies in aluminum foil
- Cook in the AirFryer for 40 minutes at 400 F / 200 C

Notes
- I use aluminum foil to keep the veggies moist and juicy. It will take less time to AirFryer without the foil, however the juices won’t be preserved
- I combined fresh and dry rosemary for a stronger flavor

The History of Beets
First cultivated in the Middle East, beets have been enjoyed for ages by the ancient Greeks, Egyptians and Romans.
Due to its great nutrition and strong color, the vegetable has been found to be useful in various spheres – in cooking, food coloring, even medicine. Whether it is in a salad, smoothie, as a main or side dish, even dessert, Beets have established themselves as a legit Superfood.
The purple veggie has been also known to be great hangover cure and some may say an aphrodisiac.
Due to its very strong coloring, though, beet stains can be difficult to get rid of. So watch out wearing a white shirt around the mischievous veggie!
